Colcannon

Colcannon – creamy Irish mashed potatoes with greens
Ireland
⏱ — min. Serves: —

Colcannon arrives steaming with the scent of butter and fresh greens folded into creamy potatoes. This is October food in Ireland—specifically Halloween—when families gather and a colcannon cooks on the stove with a wrapped coin or ring hidden inside. Whoever finds it in their portion was destined to marry that year, or so the tradition goes. The dish itself is comfort distilled: simple butter, milk, and potatoes need kale or cabbage to complete them, adding color and slight bitterness that makes the buttery potato center shine.

Ingredients

  • 2 pounds (900g) potatoes (peeled and cut into chunks)
  • 1 cup (240ml) milk
  • 4 tablespoons (60g) unsalted butter
  • 1 cup (100g) cabbage (finely shredded)
  • 4 green onions (scallions), finely chopped
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

Cook the Potatoes

Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.

Bring to a boil over high heat. Reduce heat and simmer for 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.

Drain the potatoes and return them to the pot.

Prepare the Colcannon

While the potatoes are cooking, heat the milk in a small saucepan until warm.

In a separate pan, melt 2 tablespoons of butter over medium heat. Add the shredded cabbage and cook until tender, about 5-7 minutes.

Mash the potatoes with a potato masher or ricer until smooth.

Stir in the warm milk and remaining butter until well combined and creamy.

Fold in the cooked cabbage and chopped green onions. Season with salt and black pepper to taste.

Serve

Transfer the colcannon to a serving dish. Garnish with a little extra butter if desired.

Frequently Asked Questions

Should I use cabbage or kale in colcannon?

Both are traditional. Cabbage is milder and more delicate, common in southern Ireland. Kale is earthier and more robust, preferred in the north. Use whichever you prefer or what's available. Some families use a mix.

What's the significance of the hidden coin or ring?

This Halloween tradition goes back centuries. Finding the object in your portion supposedly predicted marriage that year. Modern families skip the coin for safety, but the tradition endures in memory and family lore.

Can I make colcannon ahead and reheat it?

Yes, colcannon reheats well. Store covered in the refrigerator for up to two days. Reheat gently on the stovetop with a splash of extra milk to restore creaminess. The flavor actually deepens overnight.

Why cook the cabbage separately instead of adding it raw?

Cooking the cabbage first tenderizes it and removes rawness that might overpower the mild potatoes. Some families stir it in raw for a lighter dish. Either way works, depending on preference.

Is colcannon served at other times besides Halloween?

Yes, though Halloween is traditional, colcannon appears year-round as a side dish in Irish homes. It's equally at home beside roasted meats, curries, or as a vegetarian main. The seasons don't dictate its appeal.
