  • 1 tablespoon tomato paste
  • 1 cup beef broth or water
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt (or to taste)
  • 2 large potatoes, peeled and cut into chunks
  • 2 carrots, peeled and sliced
  • 1 bell pepper, chopped
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions

Prepare the Meat

In a large pot, heat the vegetable oil over medium-high heat.

Add the beef pieces and brown them on all sides. Remove the meat from the pot and set aside.

Cook the Aromatics

In the same pot, add the finely chopped onion and sauté until golden brown, about 5-7 minutes.

Add the minced garlic and grated ginger, and cook for another minute until fragrant.

Add the Tomatoes

Stir in the chopped tomatoes and tomato paste. Cook for about 5 minutes until the tomatoes start to break down.

Add the Spices and Meat

Add the ground coriander, ground cumin, ground turmeric, ground black pepper, and salt to the pot. Mix well.

Return the browned beef to the pot and stir to combine with the tomato mixture.

Add Liquid

Pour in the beef broth or water and bring the mixture to a boil.

Reduce the heat to low, cover, and let it simmer for about 45 minutes, or until the beef is tender.

Add Vegetables

Add the potato chunks, sliced carrots, and chopped bell pepper to the pot.

Continue to simmer for another 20-25 minutes, or until the vegetables are cooked through and the stew has thickened.
