Peel the papaya and remove the seeds.
Cut the papaya into small cubes or thin slices.
In a large pot, combine the water and granulated sugar. Bring to a boil over medium heat, stirring until the sugar is dissolved.
Add the papaya cubes or slices to the sugar syrup.
Reduce the heat and simmer the papaya for about 30-40 minutes, or until the papaya becomes translucent and the syrup thickens.
Stir in the lemon juice and vanilla extract.
Continue to simmer for an additional 5 minutes.
Using a slotted spoon, carefully remove the papaya pieces from the syrup and place them on a wire rack or a baking sheet lined with parchment paper.
Allow the papaya to cool and dry for several hours, or overnight, until they are no longer sticky.
If desired, toss the dried papaya pieces in powdered sugar to coat them lightly.
Store the mapopo candy in an airtight container.
