In a large bowl, combine the beef, pork, and chicken slices.
Add the minced garlic, ground paprika, ground cumin, ground coriander, ground black pepper, and salt.
Mix well to ensure the meat is evenly coated with the spices.
In a large skillet or grill pan, heat the vegetable oil over medium heat.
Add the sliced onions and cook until they become translucent.
Add the chopped tomatoes and cook until they are soft and well combined with the onions. Remove from the skillet and set aside.
In the same skillet or on a grill, cook the marinated meat in batches until it is well-browned and cooked through. This should take about 5-7 minutes per side for each batch.
Once all the meat is cooked, return it to the skillet with the sautéed onions and tomatoes.
Stir well to combine and heat through.
Garnish the gango with chopped fresh cilantro or parsley.
