Ingredients

  • 1 bunch of collard greens or kale, chopped
  • 2 medium tomatoes, chopped
  • 1 medium onion, finely chopped
  • 1 cup (240 g) pumpkin or squash, peeled and cubed
  • 1 cup (240 ml) natural peanut butter or ground peanuts
  • 2 cups (480 ml) water or vegetable broth
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

Sauté the Vegetables

In a large pot, heat the vegetable oil over medium heat.

Add the finely chopped onion and sauté until it becomes translucent.

Add the chopped tomatoes and cook until they are soft and well combined with the onions.

Cook the Greens and Pumpkin

Add the chopped collard greens or kale to the pot and stir well.

Add the cubed pumpkin or squash and continue to cook for about 5 minutes.

Prepare the Peanut Sauce

In a bowl, mix the natural peanut butter or ground peanuts with the water or vegetable broth until smooth.

Pour the peanut sauce into the pot with the vegetables.

Stir well to combine and bring to a simmer.

Simmer the Ifisashi

Reduce the heat to low and let the mixture simmer for about 20-25 minutes, or until the vegetables are tender and the sauce has thickened.

Stir occasionally to prevent sticking and ensure even cooking.

Season and Serve

Season with salt to taste.
