Ingredients

  • 1 loaf of rustic Italian bread or baguette, sliced
  • 4 ripe tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup (60 ml) extra virgin olive oil
  • 1/4 cup (10 g) fresh basil leaves, chopped
  • Salt and black pepper to taste
  • Balsamic vinegar (optional)
  • Fresh mozzarella or Parmesan cheese (optional)

Instructions

Prepare the Bread

Preheat your oven to 400°F (200°C).

Arrange the bread slices on a baking sheet.

Brush each slice lightly with extra virgin olive oil.

Toast the bread in the preheated oven for about 8-10 minutes, or until golden and crispy.

Prepare the Tomato Topping

In a medium bowl, combine the diced tomatoes, minced garlic, chopped basil, and remaining olive oil.

Season with salt and black pepper to taste.

If using, add a splash of balsamic vinegar for extra flavor.

Mix well to combine.

Assemble the Bruschetta

Once the bread is toasted, remove it from the oven.

Spoon the tomato mixture generously onto each slice of toasted bread.

If using, top with fresh mozzarella slices or grated Parmesan cheese.

Serve

Arrange the bruschetta on a serving platter.
