Ingredients

  • 1 lb (450 g) farmer's cheese or cottage cheese, well-drained
  • 2 large eggs
  • 1/4 cup (50 g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup (60 g) all-purpose flour, plus more for dusting
  • Vegetable oil or butter for frying
  • Sour cream and fresh berries for serving (optional)

Instructions

Prepare the Batter

In a large mixing bowl, combine the farmer's cheese, eggs, sugar, vanilla extract, and salt.

Mix well until the ingredients are fully combined and smooth.

Gradually add the flour, mixing until a thick batter forms. If the batter is too sticky, add a bit more flour.

Shape the Syrniki

Dust your hands and a working surface with flour.

Scoop a small amount of batter (about 2 tablespoons) and shape it into a small patty or pancake, about 1/2 inch (1.25 cm) thick.

Repeat with the remaining batter.

Fry the Syrniki

In a large skillet, heat the vegetable oil or butter over medium heat.

Add the shaped syrniki to the skillet in batches, making sure not to overcrowd the pan.

Fry for about 3-4 minutes on each side, or until golden brown and cooked through.
