In a large pot, heat the vegetable oil over medium heat.
Add the finely chopped onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and fresh ginger, cooking for another minute.
Add the goat meat or beef pieces and cook until browned on all sides.
Stir in the chopped tomatoes, tomato paste, and green chilies (if using). Cook until the tomatoes soften, about 3-4 minutes.
Add the ground smoked paprika, ground cumin, ground coriander, salt, and black pepper. Mix well to coat the meat with the spices.
Pour in the water or beef broth and bring the mixture to a boil.
Reduce the heat to low and simmer for about 45 minutes to 1 hour, or until the meat is tender.
Stir in the chopped spinach or ademe leaves and cook for another 10-15 minutes, or until the greens are tender and the flavors are well combined.
Remove from heat and let the Ademe Dessi cool slightly.
Garnish with fresh cilantro if desired.
