Ingredients

  • 2 lbs (900 g) beef ribs or goat meat, cut into large chunks
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt (adjust to taste)
  • Juice of 2 lemons
  • 2 tablespoons vegetable oil
  • Fresh cilantro or parsley for garnish (optional)

Instructions

In a large bowl, combine the minced garlic, minced ginger, ground coriander, ground cumin, paprika, ground black pepper, salt, lemon juice, and vegetable oil. Mix well to create a marinade.

Add the beef ribs or goat meat chunks to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.

Preheat your grill to medium-high heat.

Remove the meat from the marinade and let any excess marinade drip off.

Grill the meat, turning occasionally, until it is cooked through and has a nice char on the outside, about 20-30 minutes depending on the size of the chunks.

Remove the meat from the grill and let it rest for a few minutes before serving.

Garnish with fresh cilantro or parsley if desired.
