Ingredients

  • 4 large potatoes, peeled and sliced into thin rounds
  • 4 large eggs
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 1 green bell pepper, finely chopped
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup (120 ml) vegetable oil for frying
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

Preheat the Pan

Heat the vegetable oil in a large skillet over medium heat.

Prepare the Potatoes

Add the sliced potatoes to the hot oil and fry until they are golden brown and crispy. Stir occasionally to ensure even cooking.

Once cooked, remove the potatoes from the skillet and place them on a paper towel to drain excess oil.

Prepare the Egg Mixture

In a large bowl, beat the eggs and season with salt and black pepper.

Stir in the chopped onion, tomato, and green bell pepper.

Combine Potatoes and Egg Mixture

Add the fried potatoes to the egg mixture and mix gently to combine.

Cook the Chipsi Mayai

Pour the potato and egg mixture back into the skillet, spreading it evenly.

Cook over medium heat until the eggs are set and the bottom is golden brown, about 5-7 minutes.

Carefully flip the Chipsi Mayai using a plate or a large spatula and cook the other side until golden brown, about 3-5 minutes.

Serve

Once fully cooked, remove the Chipsi Mayai from the skillet and let it cool slightly.

Cut into wedges and garnish with chopped fresh cilantro if desired.
