Ingredients

  • 1 lb (450 g) lamb or beef, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2-3 cloves garlic, minced
  • 2 large carrots, sliced
  • 2 large potatoes, peeled and diced
  • 2 tomatoes, chopped
  • 1 bell pepper, chopped
  • 1/2 cup green beans, cut into 1-inch pieces
  • 1/2 cup chickpeas, cooked or canned (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and black pepper to taste
  • 6 cups water or beef broth
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

Prepare the Meat

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.

Add the lamb or beef pieces and brown them on all sides.

Cook the Onions and Garlic

Add the finely chopped onion to the pot and sauté until it becomes translucent.

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Add the Vegetables

Add the sliced carrots, diced potatoes, chopped tomatoes, chopped bell pepper, green beans, and chickpeas (if using) to the pot.

Stir well to combine with the meat and onions.

Season the Soup

Stir in the ground cumin, ground coriander, salt, and black pepper.

Pour in the water or beef broth and bring the mixture to a boil.

Simmer the Soup

Reduce the heat to low, cover, and let the soup simmer for about 45-60 minutes, or until the meat and vegetables are tender.

Taste and adjust seasoning if necessary.

Serve

Ladle the soup into serving bowls.

Garnish with chopped fresh parsley or cilantro.
