Peel the green plantains and cut them into slices or chunks. Set aside.
Heat the vegetable oil in a large pot or skillet over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another 1-2 minutes.
Stir in the chopped tomatoes, red bell pepper, ground cumin, ground coriander, turmeric, and paprika. Cook for 5 minutes, until the tomatoes start to break down and the spices are fragrant.
Add the sliced plantains to the pot and stir to coat with the tomato and spice mixture.
Pour in the vegetable or chicken broth, enough to cover the plantains. Stir in the tomato paste. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the plantains are tender.
Stir in the peas and cook for an additional 5 minutes, until the peas are heated through and tender. Season with salt and black pepper to taste.
Garnish with fresh chopped cilantro before serving. Serve Matoke hot with a side of rice, meat, or as a standalone dish.
