Mishkak

Ingredients

Base Ingredients

• 1 pound beef or lamb, cut into cubes
• 1/4 cup vegetable oil
• 1 large onion, finely chopped
• 2 cloves garlic, minced
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1 teaspoon ground paprika
• 1/2 teaspoon ground turmeric
• 1/2 teaspoon ground cinnamon
• 1/2 teaspoon ground black pepper
• 1/2 teaspoon ground cardamom
• 1 tablespoon tomato paste
• 1/4 cup soy sauce
• 2 tablespoons lemon juice
• Salt to taste
• Wooden skewers (soaked in water for 30 minutes)

Preparation

Base Ingredients

In a large bowl, mix the vegetable oil, cumin, coriander, paprika, turmeric, cinnamon, black pepper, cardamom, tomato paste, soy sauce, and lemon juice.
Add the beef or lamb cubes to the bowl and toss to coat well. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.
Preheat your grill or broiler to medium-high heat.
Thread the marinated meat onto the wooden skewers.
Grill or broil the skewers for about 10-12 minutes, turning occasionally, until the meat is cooked to your desired level of doneness.
Remove from the grill and let rest for a few minutes before serving.
Serve hot with your favorite dipping sauce and side dishes.
