Ingredients

  • 8 ounces pancit canton noodles (or substitute with egg noodles)
  • 2 tablespoons vegetable oil
  • 1/2 pound chicken breast, thinly sliced
  • 1/2 pound pork loin, thinly sliced
  • 1/2 cup carrots, julienned
  • 1/2 cup bell peppers, sliced
  • 1/2 cup cabbage, shredded
  • 1/4 cup green onions, chopped
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 2 cups chicken broth
  • Salt and black pepper to taste
  • Lemon or calamansi wedges (for serving)

Instructions

Prepare the Noodles

Cook the pancit canton noodles according to package instructions. Drain and set aside.

Cook the Meat

In a large skillet or wok, heat vegetable oil over medium-high heat.

Add the sliced chicken and pork. Cook until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.

Prepare the Vegetables

In the same skillet, add a bit more oil if needed. Sauté the chopped onion and minced garlic until fragrant and softened, about 2-3 minutes.

Add the carrots, bell peppers, and cabbage. Cook until the vegetables are tender-crisp, about 3-4 minutes.

Combine and Cook

Return the cooked chicken and pork to the skillet with the vegetables.

Stir in the soy sauce, oyster sauce (if using), and chicken broth. Bring to a simmer and cook for another 2-3 minutes.

Add the cooked noodles to the skillet. Toss everything together to combine well and heat through. Adjust seasoning with salt and black pepper.

Serve

Garnish with chopped green onions.
