Ingredients

  • 1 pound beef sirloin, cut into strips
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 2 large tomatoes, sliced into wedges
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons red wine vinegar
  • 1 tablespoon aji amarillo paste (or yellow chili paste)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1/2 cup fresh cilantro, chopped
  • Cooked white rice (for serving)
  • French fries or potato wedges (for serving)

Instructions

Prepare the Beef

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the beef strips and cook until browned on all sides, about 4-5 minutes. Remove the beef from the skillet and set aside.

Cook the Vegetables

In the same skillet, add the sliced onion, green bell pepper, and minced garlic. Cook until the vegetables are slightly softened, about 3-4 minutes.

Stir in the sliced tomatoes and cook for an additional 2 minutes.

Combine Ingredients

Return the cooked beef to the skillet.

Add the soy sauce, red wine vinegar, aji amarillo paste, ground cumin, paprika, salt, and black pepper. Stir well to combine and cook for another 2-3 minutes, allowing the flavors to meld.

Finish and Serve

Stir in the chopped fresh cilantro.
