Ingredients

  • 1 pound fresh white fish fillets (such as snapper or cod), skinned and boned
  • 1 cup freshly squeezed lime or lemon juice
  • 1 medium red onion, finely chopped
  • 1-2 red chilies, deseeded and finely chopped (adjust to taste)
  • 1 large tomato, diced
  • 1 cucumber, peeled and diced
  • 1/2 cup fresh cilantro or parsley, chopped
  • 1 tablespoon coconut milk
  • Salt and black pepper to taste
  • Lettuce leaves or fresh greens (for serving)

Instructions

Prepare the Fish

Cut the fish fillets into small, bite-sized cubes.

Place the fish in a bowl and cover with the lime or lemon juice. Let it marinate in the refrigerator for at least 2-3 hours, or until the fish is opaque and "cooked" by the citrus juice.

Prepare the Vegetables

In a separate bowl, combine the finely chopped red onion, red chilies, diced tomato, diced cucumber, and chopped cilantro or parsley.

Add the marinated fish to the vegetable mixture.

Finish the Kokoda

Stir in the coconut milk and season with salt and black pepper to taste.

Mix everything gently until well combined.
