Ingredients

  • 2 cups grated cassava (yuca), peeled and washed
  • 1 cup granulated sugar
  • 1 cup coconut milk
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

Prepare the Oven and Pan

Preheat your oven to 350°F (175°C).

Grease a 9-inch square baking dish or a similar-sized oven-safe dish.

Combine Ingredients

In a large bowl, combine the grated cassava, granulated sugar, coconut milk, whole milk, melted butter, eggs, vanilla extract, ground cinnamon, ground nutmeg, and salt.

Mix well until all ingredients are thoroughly combined.

Bake the Pudding

Pour the mixture into the prepared baking dish and spread it evenly.

Bake in the preheated oven for 45-50 minutes, or until the pudding is set and the top is golden brown.

A toothpick inserted into the center should come out clean.

Cool and Serve

Allow the pudding to cool slightly before serving. It can be served warm or at room temperature.

Optionally, serve with a dollop of whipped cream or a sprinkle of additional cinnamon.
