Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 2 medium bananas)
  • 1/2 cup sour cream or yogurt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)

Instructions

Prepare the Oven and Pan

Preheat your oven to 350°F (175°C).

Grease and flour a 9-inch round cake pan or line it with parchment paper.

Mix Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg (if using).

Cream Butter and Sugar

In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.

Add Eggs and Bananas

Beat in the eggs, one at a time, until well combined.

Mix in the mashed bananas until smooth.

Combine Ingredients

Gradually add the dry ingredients to the banana mixture, alternating with the sour cream or yogurt. Begin and end with the dry ingredients. Mix until just combined.

Stir in the vanilla extract.

Bake the Cake

Pour the batter into the prepared cake pan and spread it evenly.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
