Ingredients

  • For the Quesillo:
  • 1 lb (450g) fresh cheese (quesillo or similar soft cheese)
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/4 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • For the Caramel Sauce:
  • 1 cup sugar
  • 1/4 cup water
  • 1 tablespoon lemon juice (optional)

Instructions

Prepare the Caramel Sauce

In a medium saucepan, combine the sugar, water, and lemon juice (if using).

Cook over medium heat, stirring occasionally until the sugar dissolves.

Increase the heat and bring to a boil. Do not stir after this point.

Continue cooking until the mixture turns a deep amber color.

Remove from heat and carefully pour the caramel into the bottom of a round baking dish, tilting the dish to coat the bottom evenly. Set aside to cool.

Prepare the Quesillo

Preheat your oven to 350°F (175°C).

In a medium bowl, whisk together the heavy cream, milk, sugar, eggs, and vanilla extract until well combined.

Cut the fresh cheese into small cubes and gently fold them into the mixture.

Pour the cheese mixture over the set caramel in the baking dish.

Bake the Quesillo

Place the baking dish in a larger roasting pan.

Fill the roasting pan with hot water until it reaches halfway up the sides of the baking dish (this is called a water bath).

Bake for 45-55 minutes, or until a knife inserted into the center comes out clean.

Cool and Serve

Remove the baking dish from the water bath and allow it to cool to room temperature.

Once cooled, refrigerate for at least 2 hours before serving.

To serve, run a knife around the edges of the quesillo to loosen it. Invert onto a plate to release it from the baking dish.
