Preheat your oven to 400°F (200°C).
Peel the kumara and cut them into evenly sized cubes or wedges.
In a large bowl, toss the kumara pieces with olive oil, salt, black pepper, and paprika if using. Make sure the pieces are evenly coated.
Spread the seasoned kumara in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, or until the kumara are tender and golden brown, turning them halfway through the cooking time for even roasting.
Remove from the oven and garnish with fresh herbs if desired. Serve warm.
