Ingredients

  • 1 cup mixed beans (such as kidney beans, black beans, chickpeas, and lentils)
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1 green chili, finely chopped (adjust to taste)
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 2 tomatoes, chopped
  • 4 cups vegetable broth or water
  • Salt, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

Soak the Beans

Rinse the mixed beans and soak them in water overnight or for at least 8 hours.

Cook the Beans

Drain the soaked beans and rinse them again.

In a large pot, add the beans and cover them with fresh water.

Bring to a boil, then reduce the heat and simmer for about 30-40 minutes or until the beans are tender.

Drain and set aside.

Prepare the Base

Heat the vegetable oil in a large pot over medium heat.

Add the chopped onion and sauté until translucent.

Add the minced garlic, ginger, and green chili. Sauté for another 2-3 minutes until fragrant.

Add Spices and Tomatoes

Stir in the turmeric powder, cumin powder, coriander powder, and garam masala.

Add the chopped tomatoes and cook until they break down and become soft.

Combine and Simmer

Add the cooked beans to the pot.

Pour in the vegetable broth or water and stir to combine.

Bring to a boil, then reduce the heat and let it simmer for 10-15 minutes, allowing the flavors to meld together.

Season and Serve

Season with salt to taste.

Garnish with fresh cilantro before serving.
