Ingredients

  • 1 cup (120g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) coconut milk
  • 1/2 cup (120ml) water
  • 1/4 cup (60ml) pandan juice (fresh or from concentrate)
  • 1/4 cup (60ml) vegetable oil
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: 1/4 cup (30g) desiccated coconut for garnish

Instructions

Preheat Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Mix Wet Ingredients

In a large mixing bowl, whisk together eggs, sugar, coconut milk, water, pandan juice, and vegetable oil until well combined.

Combine Dry Ingredients

In a separate bowl, sift together flour, baking powder, and salt.

Combine Wet and Dry Ingredients

Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

Bake Cake

Pour the batter into the prepared cake pan.

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Cool and Serve

Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Optionally, garnish with desiccated coconut before serving.
