Ingredients

  • 4 mahi mahi fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Lemon wedges for serving
  • Fresh parsley or cilantro for garnish (optional)

Instructions

Prepare Marinade

In a small bowl, combine olive oil, lemon juice, minced garlic, dried oregano, dried thyme, paprika, salt, and pepper. Mix well.

Marinate Fish

Place the mahi mahi fillets in a shallow dish or resealable plastic bag.

Pour the marinade over the fillets, ensuring they are evenly coated.

Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Preheat Grill

Preheat the grill to medium-high heat. If using a charcoal grill, ensure the coals are well-lit and have a consistent heat.

Grill Fish

Remove the mahi mahi from the marinade and discard any excess marinade.

Place the fillets on the grill and cook for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.

Serve

Remove the grilled mahi mahi from the grill and let it rest for a few minutes.
