Peel and mash the bananas in a bowl until smooth.
In a separate bowl, combine the flour, sugar, baking powder, and salt.
Add the dry ingredients to the mashed bananas. Mix well.
In another bowl, beat the egg and add milk. Pour this mixture into the banana-flour mixture and stir until just combined. The batter should be thick but pourable. If too thick, add a little more milk.
Heat vegetable oil in a frying pan over medium heat. You need enough oil to submerge the fritters halfway.
Drop spoonfuls of batter into the hot oil, a few at a time. Flatten them slightly with the back of the spoon.
Fry for about 2-3 minutes on each side, or until golden brown and cooked through.
Remove the fritters from the oil and drain on paper towels to remove excess oil.
Dust with powdered sugar if desired and serve warm.
