Ingredients

  • 4 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 2 teaspoons sugar
  • 1 tablespoon active dry yeast
  • 1 1/2 cups warm water (110째F/45째C)
  • 2 tablespoons olive oil
  • 1 teaspoon sesame seeds (optional)
  • 1 teaspoon nigella seeds (optional)

Instructions

Prepare the Dough

In a small bowl, dissolve the sugar in the warm water and sprinkle the yeast over the top. Let it sit for about 5-10 minutes, or until the mixture becomes frothy.

In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

Stir the mixture with a wooden spoon or spatula until it starts to come together. Then, knead the dough on a floured surface for about 8-10 minutes, or until it becomes smooth and elastic.

First Rise

Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Shape and Second Rise

Punch down the risen dough and turn it out onto a floured surface. Divide it into 2 equal pieces.

Shape each piece into a round loaf and place them on a baking sheet lined with parchment paper or lightly greased.

Cover the loaves with a damp cloth and let them rise for about 30-45 minutes, or until puffed and nearly doubled.

Preheat and Bake

Preheat your oven to 425째F (220째C).

If desired, brush the tops of the loaves with a bit of water and sprinkle with sesame seeds and nigella seeds.

Bake the loaves in the preheated oven for about 25-30 minutes, or until the tops are golden brown and the bread sounds hollow when tapped on the bottom.

Cool and Serve

Allow the loaves to cool on a wire rack before slicing.
