In a large bowl, combine the ground beef and ground pork.
Add the finely chopped onion, minced garlic, egg, and breadcrumbs.
Season with paprika, cumin, oregano, salt, and black pepper.
Mix until all ingredients are well incorporated, but do not overmix.
Divide the mixture into 4-6 equal portions.
Shape each portion into a flat, round patty about 1/2 inch thick.
Preheat your grill or grill pan over medium-high heat.
Brush the grill grates with olive oil to prevent sticking.
Place the patties on the hot grill.
Cook for 4-5 minutes on each side, or until the patties are cooked through and have a nice sear.
If you are adding cheese, place a slice on each patty during the last minute of grilling and close the lid to melt.
Toast the buns on the grill if desired.
Place each patty on the bottom half of a bun.
Top with your choice of toppings such as lettuce, tomato, onion, pickles, and condiments.
