Ingredients

  • 2 cups black beans (soaked overnight)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 medium bell pepper, diced
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (or to taste)
  • 4 cups vegetable broth or water
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1/2 cup chopped fresh parsley (optional, for garnish)

Instructions

Prepare Beans

Drain and rinse the soaked black beans.

Cook Vegetables

In a large pot, heat vegetable oil over medium heat. Add chopped onion and cook until softened and translucent.

Add minced garlic, diced carrot, and bell pepper. Cook for an additional 5 minutes, stirring occasionally.

Add Spices and Beans

Stir in ground cumin, paprika, black pepper, and salt.

Add the soaked black beans and mix well.

Simmer

Add vegetable broth or water, tomato paste, and bay leaf. Bring to a boil.

Reduce heat and simmer for about 1 to 1.5 hours, or until beans are tender. Stir occasionally and add more liquid if necessary.

Finish

Remove the bay leaf. Adjust seasoning with salt and pepper if needed.

Garnish with chopped fresh parsley, if desired.
