Ingredients

  • For the Fish Marinade:
  • 500 grams fish fillets (such as snapper or tilapia)
  • 1 tablespoon turmeric powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons lemon juice
  • For the Vindaye Sauce:
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 green chilies, sliced
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1 teaspoon sugar
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 2 medium tomatoes, chopped
  • 1/4 cup chopped cilantro (coriander) leaves

Instructions

Marinate the Fish

In a bowl, combine turmeric powder, salt, black pepper, and lemon juice.

Coat the fish fillets with the marinade and let it sit for at least 30 minutes.

Prepare the Vindaye Sauce

Heat the vegetable oil in a large pan over medium heat.

Add mustard seeds, cumin seeds, and coriander seeds. Cook until they start to pop.

Add the chopped onion, garlic, ginger, and green chilies. Sauté until the onion is translucent.

Stir in turmeric powder, paprika, and sugar. Cook for a minute.

Add chopped tomatoes and cook until they break down and form a sauce.

Pour in the white vinegar and water. Bring to a simmer.

Cook the Fish

Gently add the marinated fish fillets to the simmering sauce.

Cover and cook for about 10-15 minutes, or until the fish is cooked through and tender.

Check for seasoning and adjust salt or sugar if needed.

Garnish and Serve

Stir in chopped cilantro leaves.
