Ingredients

  • For the Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • For the Filling:
  • 1 cup light corn syrup
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 1/2 cups macadamia nuts, chopped (or whole if preferred)

Instructions

Prepare the Crust

Preheat your oven to 350°F (175°C).

In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are well coated and the mixture resembles wet sand.

Press the crumb mixture into the bottom and up the sides of a 9-inch (23 cm) pie pan to form the crust.

Bake the crust in the preheated oven for about 8 minutes, or until lightly golden. Remove from the oven and let it cool.

Prepare the Filling

In a large bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, vanilla extract, and salt until smooth and well combined.

Stir in the chopped macadamia nuts (or leave them whole if you prefer).

Assemble and Bake

Pour the filling into the pre-baked crust, spreading it evenly.

Bake in the oven for 45-50 minutes, or until the filling is set and the top is golden brown. A knife inserted into the center should come out clean.

Cool and Serve

Allow the pie to cool completely before slicing. This helps the filling set up properly.
