Ingredients

  • 1 whole red snapper, cleaned and scaled (about 2 pounds or 900 grams)
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 lemon, juiced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/4 cup fresh cilantro, chopped (optional, for garnish)
  • Lemon wedges, for serving

Instructions

Prepare the Marinade

In a small bowl, mix together the vegetable oil, minced garlic, minced ginger, lemon juice, soy sauce, fish sauce, paprika, black pepper, and salt.

Marinate the Fish

Rub the marinade all over the red snapper, including inside the cavity. Ensure the fish is well-coated.

Let the fish marinate in the refrigerator for at least 30 minutes to 1 hour to absorb the flavors.

Preheat the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, make sure the coals are evenly distributed.

Grill the Fish

Place the marinated fish on the grill. Cook for about 5-7 minutes on each side, or until the fish is cooked through and has a nice char. The flesh should be opaque and flake easily with a fork.

Serve

Remove the fish from the grill and let it rest for a few minutes.

Garnish with fresh cilantro if desired.
