In a large bowl, combine the flour, sugar, and salt. Mix well.
In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes, or until frothy.
Make a well in the center of the flour mixture and pour in the yeast mixture and olive oil.
Mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes, until it becomes smooth and elastic.
Place the dough in a lightly oiled bowl, cover it with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Preheat your oven to 425°F (220°C).
Punch down the dough and shape it into a round or oval loaf. Place it on a baking sheet lined with parchment paper.
If using, sprinkle dried oregano and rosemary on top of the dough.
Bake for 20-25 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
Let the Ftira cool on a wire rack before slicing and serving.
