Preheat your oven to 350°F (175°C).
In a bowl, mix the breadcrumbs, Parmesan cheese, garlic, parsley, oregano, thyme, salt, and pepper.
Place a small amount of the breadcrumb mixture on each beef slice. Roll up the beef slices tightly and secure them with toothpicks or kitchen twine.
In a large skillet, heat the olive oil over medium heat. Add the rolled beef slices and cook until browned on all sides. Remove from the skillet and set aside.
In the same skillet, add the chopped onion and cook until softened.
Return the beef rolls to the skillet and pour in the beef broth, tomato sauce, and red wine (if using). Bring to a simmer.
Transfer the beef rolls and sauce to a baking dish and cover with foil.
Bake for 1.5 to 2 hours, or until the beef is tender and the flavors have melded together.
Remove from the oven and let the dish rest for a few minutes before serving.
