In a large saucepan, bring the water to a boil.
Gradually whisk in the millet flour, stirring continuously to prevent lumps.
Reduce the heat to low and cook the mixture, stirring frequently, for about 20-30 minutes, until it thickens and the flour is fully cooked.
Add salt and sugar to taste. Continue to cook for an additional 5 minutes.
If using yogurt, stir it into the mixture once it is removed from heat. This will give a creamier texture and add a tangy flavor.
Allow the Tiga Dégué to cool slightly before serving. It can be served warm or at room temperature.
