Ingredients

  • 1 cup fonio
  • 1 1/2 cups water
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil or butter (optional)
  • Fresh herbs or vegetables for garnish (e.g., parsley, bell peppers, onions)

Instructions

Rinse the Fonio

Rinse the fonio in a fine-mesh strainer under cold running water to remove any dust or impurities.

Cook the Fonio

In a medium saucepan, bring 1 1/2 cups of water to a boil.

Add the fonio and salt to the boiling water.

Reduce the heat to low, cover the saucepan, and let it simmer for about 5 minutes. Fonio cooks quickly, so it should be ready in a short time.

Fluff the Fonio

Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.

Fluff the fonio with a fork to separate the grains.

Optional Additions

If desired, stir in olive oil or butter for added flavor and richness.

Garnish with fresh herbs or sautéed vegetables of your choice.
