In a medium saucepan, bring 2 cups of water to a boil.
Add the millet or couscous to the boiling water. Reduce the heat to low, cover, and simmer until the grains are tender and the water is absorbed (about 15 minutes for couscous or 20-25 minutes for millet).
Remove the saucepan from heat and let the grains cool slightly.
In a large bowl, combine the cooked millet or couscous with the yogurt.
Stir in honey or sugar to sweeten, and add cinnamon and vanilla extract if using.
Refrigerate the mixture for at least 1 hour to let the flavors meld and the texture firm up.
Spoon the degué into serving bowls.
Garnish with fresh fruits or nuts as desired.
