Ingredients

  • 2 large potatoes, peeled and grated
  • 1 large onion, finely chopped
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped fresh dill (optional)
  • 1/2 cup bacon bits or cooked, crumbled bacon (optional)
  • Oil for frying

Instructions

Prepare the Mixture

In a large bowl, combine the grated potatoes and chopped onion.

Add the flour, eggs, baking powder, salt, and black pepper. Mix well to form a batter.

If using, fold in the chopped dill and bacon bits.

Cook the Vedarai

Heat a generous amount of oil in a large skillet over medium heat.

Spoon heaping tablespoons of the batter into the hot oil, flattening them slightly with the back of the spoon.

Fry until golden brown and crispy on both sides, about 3-4 minutes per side.

Drain and Serve

Transfer the cooked vedarai to a plate lined with paper towels to drain excess oil.
