Ingredients

  • For the Salad:
  • 1 large head of Romaine lettuce, chopped
  • 1 cucumber, diced
  • 2-3 radishes, sliced
  • 1-2 tomatoes, diced
  • 1 bell pepper (any color), diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 2-3 green onions, sliced
  • 1/2 cup pomegranate seeds (optional)
  • 2-3 pieces of pita bread, toasted and broken into pieces
  • For the Dressing:
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1-2 cloves garlic, minced
  • 1 teaspoon ground sumac
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste

Instructions

Prepare the Salad

Combine Vegetables

In a large bowl, combine the chopped Romaine lettuce, diced cucumber, sliced radishes, diced tomatoes, diced bell pepper, chopped parsley, chopped mint leaves, and sliced green onions.

Add Pomegranate Seeds

If using, gently fold in the pomegranate seeds for added sweetness and color.

Add Pita Chips

Just before serving, add the toasted pita bread pieces to the salad.

Prepare the Dressing

Mix Dressing

In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, minced garlic, ground sumac, Dijon mustard, salt, and black pepper until well combined.

Dress Salad

Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
