Ingredients

  • 1 pound (450g) fresh fish fillets (such as tuna or snapper), cut into small cubes
  • 1 cup coconut milk
  • 1/2 cup fresh lime juice (about 2 limes)
  • 1 small red onion, finely chopped
  • 1 small cucumber, peeled and diced
  • 1 small tomato, diced
  • 1-2 fresh chili peppers, sliced (optional, for heat)
  • 2 tablespoons chopped fresh cilantro
  • Salt and black pepper to taste
  • Lettuce leaves (for serving, optional)

Instructions

Prepare the Fish

In a large bowl, combine the fish cubes with lime juice. Marinate for about 15-20 minutes. The acidity from the lime juice will "cook" the fish slightly.

Prepare the Vegetables

While the fish is marinating, prepare the vegetables. In a separate bowl, combine the chopped red onion, diced cucumber, diced tomato, and sliced chili peppers (if using).

Mix the Ika Mata

Drain the excess lime juice from the fish and discard it.

Add the coconut milk to the marinated fish and mix well.

Stir in the prepared vegetables and chopped cilantro. Season with salt and black pepper to taste.
