Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons melted butter
  • Butter or oil, for greasing the pan
  • Optional: jam, whipped cream, or sugar for serving

Instructions

Prepare the Batter

In a large bowl, whisk together the flour, sugar, and salt.

In another bowl, mix the milk and eggs.

Gradually add the wet ingredients to the dry ingredients, whisking until smooth.

Stir in the melted butter.

Cook the Pönnukökur

Heat a non-stick skillet or crepe pan over medium heat and lightly grease with butter or oil.

Pour a small amount of batter into the pan, tilting and swirling to spread it evenly into a thin layer.

Cook for about 1-2 minutes, or until the edges start to lift and the bottom is golden brown.

Flip and cook the other side for another 1-2 minutes.

Serve

Remove the pönnukökur from the pan and keep warm.
