Ingredients

  • 2 lbs lamb or beef, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 large carrots, peeled and sliced
  • 2 large potatoes, peeled and cubed
  • 1 small rutabaga (swede), peeled and cubed
  • 1 small cabbage, chopped
  • 2-3 bay leaves
  • 1 teaspoon dried thyme
  • 6 cups beef or vegetable broth
  • 1 cup water (or more, as needed)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Prepare the Meat

Heat the vegetable oil in a large pot over medium heat.

Add the lamb or beef chunks and cook until browned on all sides. Remove the meat from the pot and set aside.

Sauté Vegetables

In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.

Combine Ingredients

Return the browned meat to the pot. Add the sliced carrots, cubed potatoes, rutabaga, and chopped cabbage.

Stir in the bay leaves and dried thyme.

Add Liquids

Pour in the beef or vegetable broth and water. Bring to a boil, then reduce the heat to low.

Cover and simmer for about 1.5 to 2 hours, or until the meat and vegetables are tender.

Season

Season with salt and black pepper to taste.

Serve

Remove the bay leaves before serving.

Garnish with fresh chopped parsley.
