Ingredients

  • 2 cups long-grain white rice
  • 1/2 cup dried djon djon mushrooms (black mushrooms) or substitute with dried shiitake mushrooms
  • 4 cups water or chicken broth
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon thyme
  • 1/2 teaspoon paprika
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 2-3 green onions, chopped
  • Fresh parsley, chopped (for garnish)

Instructions

Prepare the Mushrooms

Soak the dried djon djon mushrooms in 2 cups of warm water for about 30 minutes, or until they are softened. If using shiitake mushrooms, soak them similarly.

Drain the mushrooms, reserving the soaking liquid.

Cook the Rice

In a large pot, heat the vegetable oil over medium heat.

Add the chopped onion, garlic, and bell pepper. Sauté until the vegetables are soft and fragrant, about 5 minutes.

Stir in the thyme, paprika, salt, and black pepper.

Add the Mushrooms and Liquid

Add the soaked mushrooms to the pot and stir well.

Pour in the reserved mushroom soaking liquid and the remaining 2 cups of water or chicken broth. Bring to a boil.

Simmer the Rice

Stir in the rice, making sure it is well combined with the liquid and mushrooms.

Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.

Finish and Serve

Fluff the rice with a fork and stir in the chopped green onions.

Garnish with fresh parsley before serving.
