Rinse the fonio under cold water to remove any dust or impurities.
In a medium pot, bring the water or vegetable broth to a boil. Add the salt and vegetable oil (or butter).
Stir in the fonio. Reduce the heat to low, cover the pot, and let it simmer for about 5-7 minutes, or until the liquid is absorbed and the fonio is tender.
Remove the pot from heat and let it sit, covered, for an additional 5 minutes. Then, fluff the fonio with a fork.
If using vegetables, heat a small amount of oil in a pan and sauté the chopped vegetables until tender. Stir them into the fonio before serving.
Garnish with fresh herbs if desired and serve warm.
