Ingredients

  • For the Sausage:
  • 1 lb pork sausages (long, thin sausages like chorizo or bratwurst)
  • For the Toppings:
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tablespoons mustard
  • 1/2 cup pickled cabbage or curtido (shredded cabbage pickled in vinegar)
  • 1/2 cup sliced tomatoes
  • 1/4 cup sliced onions
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced
  • Hot sauce to taste (optional)
  • Salt and black pepper to taste
  • For the Bread:
  • 4 hot dog buns or crusty rolls

Instructions

Cook the Sausages

Preheat a grill or skillet over medium heat.

Grill or cook the sausages until they are well browned and cooked through, about 7-10 minutes, turning occasionally.

Prepare the Toppings

In a small bowl, mix the mayonnaise, ketchup, and mustard. Adjust to taste.

If using pickled cabbage or curtido, drain and set aside.

Slice the tomatoes, onions, and avocado.

Assemble the Shucos

Slice the hot dog buns or rolls lengthwise but not all the way through, creating a pocket for the sausage.

Spread a layer of the mayonnaise mixture on the inside of each bun.

Place the cooked sausage in each bun.

Top with pickled cabbage, sliced tomatoes, onions, avocado, and fresh cilantro.

Add hot sauce if desired and season with salt and black pepper to taste.
