Ingredients

  • 1 cup odika (African oil bean) or substitute with dried locust beans
  • 2 tablespoons palm oil or vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1-2 hot peppers, finely chopped (adjust to taste)
  • 1 cup chopped tomatoes
  • 1 teaspoon ground crayfish or shrimp powder (optional)
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon salt (adjust to taste)
  • 1 cup water or chicken broth
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions

Prepare the Odika

If using dried odika, soak it in water overnight to soften. Rinse and set aside.

Cook the Base

In a large pot or skillet, heat the palm oil or vegetable oil over medium heat.

Add the finely chopped onion and cook until softened and translucent, about 5 minutes.

Stir in the minced garlic and chopped hot peppers, cooking for another 1-2 minutes.

Add Tomatoes and Spices

Add the chopped tomatoes to the pot and cook until they break down and blend with the onions, about 5 minutes.

Stir in the ground crayfish or shrimp powder (if using), ground coriander, paprika, and salt.

Combine and Simmer

Add the soaked odika (or dried locust beans) to the pot.

Pour in the water or chicken broth and stir to combine.

Simmer for about 20-30 minutes, or until the odika is tender and the flavors are well combined.

Serve

Garnish with chopped fresh cilantro or parsley.
