Ingredients

  • 2 cups cassava flour
  • 1 cup water
  • 1/2 teaspoon salt (adjust to taste)
  • 1 tablespoon palm oil or vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1-2 hot peppers, finely chopped (adjust to taste)
  • 1/2 teaspoon ground crayfish or shrimp powder (optional)
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions

Prepare the Mixture

In a large bowl, mix the cassava flour with 1 cup of water until smooth.

Cook the Mbika

In a large pot, heat the palm oil or vegetable oil over medium heat.

Add the finely chopped onion and cook until softened and translucent, about 5 minutes.

Stir in the minced garlic and chopped hot peppers, cooking for another 1-2 minutes.

Combine and Simmer

Pour the cassava flour mixture into the pot, stirring continuously to prevent lumps.

Continue to cook over low heat, stirring frequently, for about 10-15 minutes, or until the mixture thickens and becomes smooth.

If using, stir in the ground crayfish or shrimp powder.

Season

Add salt to taste and continue to cook for another 5 minutes.

Serve

Garnish with chopped fresh cilantro or parsley.
