Ingredients

  • 1 kg beef or goat meat, cut into chunks
  • 1/4 cup vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 large tomato, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt (adjust to taste)
  • 1 cup beef or chicken broth
  • 1 bay leaf
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions

Prepare the Meat

Heat the vegetable oil in a large pot over medium heat.

Add the chopped onion and cook until softened and translucent.

Stir in the minced garlic and cook for another minute.

Brown the Meat

Add the meat chunks to the pot and cook until browned on all sides.

Add Vegetables and Spices

Stir in the chopped tomato, red bell pepper, and green bell pepper.

Cook until the vegetables are tender and the tomato starts to break down.

Add ground cumin, paprika, black pepper, and salt. Mix well.

Simmer

Pour in the beef or chicken broth and add the bay leaf.

Bring to a boil, then reduce the heat to low.

Cover and simmer for about 1-1.5 hours, or until the meat is tender and cooked through. Stir occasionally and add more broth if necessary.

Serve

Remove the bay leaf and discard.

Garnish with chopped cilantro or parsley before serving.
