Ingredients

  • 2 cups tapioca flour
  • 1 cup milk
  • 1/2 cup unsalted butter
  • 1 1/2 cups grated Parmesan cheese (or a mix of Parmesan and cheddar)
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2 large eggs

Instructions

Preheat the Oven

Preheat your oven to 375째F (190째C). Grease a mini muffin tin or line it with paper liners.

Heat the Milk and Butter

In a saucepan, heat the milk and unsalted butter over medium heat until the butter is melted and the mixture is hot but not boiling.

Combine Ingredients

In a large mixing bowl, combine the tapioca flour, grated Parmesan cheese, salt, and baking powder.

Pour the hot milk and butter mixture into the dry ingredients. Stir until well combined.

Add the Eggs

Allow the mixture to cool slightly, then beat in the eggs one at a time, mixing well after each addition. The batter will be thick and slightly sticky.

Fill the Muffin Tin

Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.

Bake

Bake in the preheated oven for 15-20 minutes, or until the cheese breads are golden brown and puffed up.

Serve

Allow the p찾o de queijo to cool slightly before removing from the tin.
