Ingredients

  • 2 lbs firm white fish (such as cod or snapper), cut into chunks
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup vegetable oil
  • 1 large onion, sliced
  • 1 bell pepper (red or green), sliced
  • 2 medium tomatoes, chopped
  • 1 can (14 ounces) coconut milk
  • 1/2 cup fish stock or water
  • 1 tablespoon palm oil (optional, for authentic flavor)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon cayenne pepper (optional, for heat)
  • Cooked white rice (for serving)

Instructions

Marinate the Fish

In a large bowl, combine the fish chunks with lime juice, minced garlic, salt, and black pepper.

Toss to coat and let marinate for about 30 minutes.

Cook the Base

Heat the vegetable oil in a large pot or Dutch oven over medium heat.

Add the sliced onion and bell pepper. Cook until softened, about 5 minutes.

Stir in the chopped tomatoes and cook for another 3 minutes until the tomatoes start to break down.

Add the Fish and Liquids

Add the marinated fish to the pot.

Pour in the coconut milk and fish stock (or water).

If using, add the palm oil for an extra layer of flavor.

Simmer

Bring the mixture to a gentle simmer.

Reduce the heat to low and cook for about 15-20 minutes, or until the fish is cooked through and the flavors are well combined.

Finish and Serve

Stir in the chopped cilantro and parsley.

Add cayenne pepper if using, to adjust the heat level to your preference.

Taste and adjust seasoning if necessary.
