Ingredients

  • 4 large potatoes, peeled and grated
  • 1 small onion, finely grated
  • 1 large egg
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • Sour cream (for serving)
  • Fresh dill, chopped (for garnish)

Instructions

Prepare the Potatoes

After grating the potatoes, place them in a clean kitchen towel and squeeze out any excess liquid. This will help the draniki to be crispy.

Mix the Ingredients

In a large mixing bowl, combine the grated potatoes, grated onion, egg, flour, salt, and black pepper. Mix well until all the ingredients are thoroughly combined.

Heat the Oil

In a large skillet, heat a generous amount of vegetable oil over medium-high heat. The oil should be hot but not smoking.

Fry the Draniki

Scoop a heaping tablespoon of the potato mixture and drop it into the hot oil. Flatten it slightly with the back of the spoon to form a patty.

Fry the draniki for about 3-4 minutes on each side, or until they are golden brown and crispy. Avoid overcrowding the skillet to ensure even cooking.

Remove the draniki from the skillet and place them on a paper towel-lined plate to drain any excess oil.
