Ingredients

  • 2 lbs fresh conch meat, cleaned and diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 1/2 cup red bell pepper, finely chopped
  • 1/2 cup cucumber, finely chopped
  • 1/2 cup tomato, finely chopped
  • 1 Scotch bonnet pepper, finely chopped (optional, for heat)
  • 1/2 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

Prepare the Conch

Clean the conch meat thoroughly and dice it into small, bite-sized pieces.

Mix the Vegetables

In a large mixing bowl, combine the finely chopped red onion, green bell pepper, red bell pepper, cucumber, and tomato. If you prefer a spicy salad, add the finely chopped Scotch bonnet pepper.

Add the Conch

Add the diced conch meat to the bowl with the vegetables.

Add the Citrus Juice

Pour the fresh lime juice, orange juice, and lemon juice over the conch and vegetables. Mix well to ensure everything is evenly coated with the citrus juices.

Season and Garnish

Season the salad with salt and pepper to taste.

Garnish with freshly chopped cilantro.

Marinate

Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together.
